For folks who don’t want to carry a bunch of special energy gels and powders (or who can’t easily find any that accommodate their dietary needs) here’s a recipe for a trail-mix-like, energy dense, nutrient rich, gluten free, powerhouse, on-the-go cookie.
2 c almond meal
2 tbs coconut flour
1 tsp baking powder
⅛ tsp salt
3 tbs butter
⅓ c honey
1 tsp vanilla
¼ c chopped nuts (cashews, pecans, pistaschios, hazelnuts, etc.)
½ c dried fruit (currants, raisins, chopped apricots, etc.)
optional: 1-2 tsp spice (cinnamon, cardamom, nutmeg, ginger, etc.)
Preheat oven to 350. Combine dry ingredients in a large bowl, and mix well. Add wet ingredients and stir until thoroughly combined. Fold in nuts and fruit. Scoop golf ball sized lumps of dough onto a parchment lined baking sheet and flatten with the back of the spoon.
Bake at 350 for 10 to 12 minutes. Allow to cool completely before packing them up. These are a pretty soft cookie. If they steam at all in their container, they’re likely to fall apart completely.
Put two to four of these suckers in your hip pack and eat ‘em as you need ‘em. They’ll keep you rolling.
